An extreme lack of vitamin A can cause blindness; in fact, a vitamin A deficiency is the leading cause of blindness among several children. Vitamin A is essential for a strong immune system and healthy eyes, skin, and mucus membranes.
Lack of vitamin A can also lead to xerophthalmia, a condition in which the eyes can no longer produce tears, dryness in the eyes, swollen eyelids and corneal ulcers. Eating carrots can curb the deficiency of Vitamin A, which can also prevent the formation of cataracts and macular degeneration.
